Grey Oyster Mushroom
The grey oyster mushroom is a versatile favorite worldwide, perfect for any style of cooking. With a mild flavor and a texture reminiscent of tender chicken, it adds a delightful element to any dish. Plus, it's a great source of fiber for gut health. Say goodbye to squishy mushrooms!
Pink Oyster Mushroom
Pink oysters have evolved to produce carotenoids, beneficial antioxidants that give them their stunning color. Fry them until they're almost crispy, and you'll understand why they're often called "bacon of the woods." Like their grey oyster cousins, these mushrooms will get your guests' attention.






Golden Enoki
Golden Enoki mushrooms are fantastic in stir-fries and ramen, and their mild, fruity, and peppery flavor makes them perfect raw in salads. With their beautiful colors, they eliminate the need for additional garnishes on your dish. This mushroom grows wild in New Zealand, especially during the colder months. Known for their anti-inflammatory properties, they are also excellent immune system boosters.
Tawaka
Native to New Zealand, the Tawaka mushroom grows wild from Otago to Northland and is one of the few fungi known to have been used by Māori as medicine. It's one of our favorites to cultivate and cook with, thanks to its rich flavor. With a pleasantly chewy cap and a crunchy stem, it's best enjoyed simply fried in butter and finished with a squeeze of lemon juice or a dash of white wine to highlight its unique taste.
Lion's Mane - Pekepeke Kiore
This mushroom is truly one-of-a-kind! A New Zealand native, the NZ Lion's Mane features a unique cauliflower or coral-like appearance. While you may recognize it as a brain-boosting powder supplement, it's also a super tasty mushroom to eat! Shiitake Mushroom
The Shiitake mushroom is one of the most commonly cultivated fungi in the world and takes the longest to develop at our farm, requiring four months from start to harvest. The wait is well worth it, as this variety is one of the most flavorful mushrooms we offer, bringing a rich umami boost to any dish! For an added benefit, try leaving these mushrooms in the sun for a few hours before cooking, as they are known to produce high levels of vitamin D.
